Members will enjoy fresh spinach, head lettuce, beets, garlic, and sweet potatoes on this cold wintry day!  Spinach and sweet potatoes are so nice together....especially if you have some nice pasta on the side.  Beets are best roasted in the oven in my humble taste, but they are also good sautéed with other root crops.  Along the CSA way members have or will enjoy a variety of root crops.....turnips, carrots, potatoes, sweet potatoes, a variety of beets.....these keep well and if you save a few along the way you can put them all together for a roasted root crop feast!
